Every once in a while I like to make the recipes from magazines. Well I found the magazine "healthy cooking" at the Curves i go to, and Sunday i tried the "cheeseburger pasta" It was so good even Amy liked it. It is a lady(Raquel Haggard) from Edmond,OK 's recipe and healthy cooking tweaked it so it would be more healthy. Here it is:
1-1/2 cups uncooked whole wheat penne pasta 3/4 lb. lean ground beef
2 Tbsp. finely chopped onion 1 can(14-1/2 oz.)no-salt added diced tomatoes
2 Tbsp. dill pickle relish 2 Tbsp. prepared mustard
2 Tbsp. ketchup 1 tsp. steak seasoning(McCormick's Montreal Steak seasoning)
1/4 tsp. seasoned salt 3/4 cup cheddar cheese
1. cook pasta according to package. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Drain pasta; add to meat mixture.
2.Stir in tomatoes, relish, mustard, ketchup, steak seasoning and seasoned salt, Bring to a boil. Reduce heat; simmer, uncovered, for 5 min.
3. sprinkle with cheese, Remove from the heat:cover and let stand until cheese is melted.
We didn't do step 3 or the boiling and simmering part of step 2. (we were hungry, it was fast Sunday)
It tasted like a cheeseburger, even Tillman ate it. I doubled the recipe and it feed 5 adults and one kid. Easton wanted peanut butter and honey sandwich go figure. I had one serving left over.
Nathan didn't like the mustard in it. I couldn't taste the mustard. This can be cooked in 30 min. I'm defiantly putting this in the Crandell family recipe book.
